Simple Strawberry Shortcake Recipe

I’ve not a big fan of cake. For those of you that know about my love for baking all things sweet, you’ll probably find that shocking. But I’ve never really liked it, even on my birthday. 🤷🏻‍♀️ Growing up my mom would make me strawberry shortcake for my birthday instead of cake. 😋

Funny story, my brother and I use to sneak into our neighbors garden (army crawl style) and pick the strawberries and eat them. The neighbors didn’t like it. Neither did my parents because they would have to hear about it. Sorry mom & dad. 😬

It had been awhile since I had my moms strawberry shortcake and I was craving it, so I called my mom up to ask her how she makes the strawberry mix. I was shocked when she told me the recipe. I don’t even want to call it a recipe, since there are only 2 ingredients. 😳

Even so, it is AMAZING! See below for the recipe.

Strawberry Mix Ingredients

2 lbs of fresh strawberries
3/4 cup of sugar

You’ll also need

Biscuits
1/2 cup of granulated sugar or sugar in the raw (for the biscuits)
Whipped cream (homemade or store bought)

For the biscuits, I tried Joanna Gaines recipe from the Magnolia Table Cookbook. But you can use any biscuit recipe or even store bought biscuits. I just added 1/2 cup of sugar to the recipe to make the biscuits sweet. If you don’t want to add sugar to the recipe, you can brush the tops of the uncooked biscuits with egg wash (1 beaten egg), then sprinkle sugar in the raw over the tops. 

Step 1: Make the biscuits. Allow them to cool while you’re preparing the strawberry mix. 

Step 2: Rince and cut off the tops of the strawberries, then cut them into chunks. 

Step 3: Put the strawberries and sugar in a mixing bowl and mix with a wooden spoon.

Step 4: Cover the bowl, then refrigerate for at least 30 minutes.

Step 5: Cut a biscuit in half, add a heaping spoonful of strawberry mix, put the top of the biscuit on top of the strawberry mix, then top with a dollop of whipped cream and another spoonful of strawberry mix. 😋

And that’s a wrap! Super simple, right?!?
