Mixed Berry Pop Tart Recipe


This was the first time making homemade pop tarts and they turned out so much better than I thought they would! I am usually a trial and error type person. It’s rare the first batch of anything I make is a hit, but this is one of those recipes that I didn’t have to go back to the drawing board on. 🙌🏼

I actually made them for a breakfast carry-in for my office, but it just so happened that the day of the carry-in we got snowed in. My boys didn’t mind because they could eat them. And they did!

Instead of typing a bunch of words, I am going to jump right into the recipe!

Filling Ingredients

3 cups of mixed berries (fresh or frozen)
1/2 cup granulated sugar
1 tsp. agar*
2 tbsp. cornstarch
3 pie crusts

Note: If you do not have agar, add a third tbsp of cornstarch in its place. 

Vanilla Glaze

2 tbsp half and half
1 3/4 powdered sugar
1 tsp lemon juice
1 tsp vanilla extract
Pink gel food coloring (optional)
Sprinkles (optional)

Makes 8-16 servings

Step 1: Preheat the oven to 375º.

Step 2: Add the berries and the 1/2 cup granulated sugar to a medium size sauce pan and turn the burner to medium. Stirring occasionally.

Note: I used frozen fruit, but you can also use fresh. The berry mix I used had strawberries, cherries, and blueberries.

Step 3: Allow the berries to come to a simmer. About 10 minutes. Then remove from the burner and add in the cornstarch and agar*. Stir until well blended.

Tip: You want to achieve almost a jam consistency, so make sure the berries are smashed up and not whole.

Step 4: While the filling is cooling, cut the pie crust into rectangles (for traditional pop tarts) or use a heart shaped cookie cutter like I did. Or any other shape for that matter. I used store-bought pie crusts. I love to make things from scratch, but I’ll never think I am too good for store-bought. I am a mom. And human.

Step 5: Poke holes into the bottoms of the pop tarts with a fork. Like you would poke holes into the bottom of an unbaked pie crust.

Step 6: Add a heaping spoonful of the fruit mix on the center of each bottom crust. If you are making the traditional rectangle pop tarts you should have enough to make 8-9. If you are doing heart shaped pop tarts you should have enough to do 15-16. It all depends on how large your cookie cutter is.

Step 7: Place the top crust over the berry mix and gently press down until the edges of the bottom and top crusts are aligned.

Step 8: Using a fork (right side up) press the tongs of the fork along the edges. Think actual pop tart.

Step 9: Bake for 15-20 minutes at 375º or until the top crust is golden.

Step 10: While the pop tarts are baking, whip up the glaze. It was super simple. Add all the ingredients at once into a medium mixing bowl and whisk together until well combined. Add in pink gel food coloring if desired at this point.

Step 11: Once the pop tarts are ready, remove from the oven and top them with the glaze. Add sprinkles to make them extra fun. The kids will love them. Mine did at least.
