Hey friends! It’s been a while. Sorry for my lack of blogging, but I have been preoccupied with writing my pie book and dealing with some family things. I hope to get back to regularly posting soon.
Since yesterday was the first official day of summer I thought a homemade chocolate cherry ice cream post would be the perfect segway to get back on that proverbial saddle.
If I had to pick a favorite fruit it would be cherries. For years I have been buying them by the pounds during cherry season and then freezing them for pies. Last year I had some leftover cherries so I decided to attempt homemade cherry ice cream.
I’ll be honest, I didn’t think it would taste very good, but I was completely wrong. Last summer was the first time I had ever made homemade ice cream and it was yummy. It was so good that I unapologetically tapped into my frozen cherry supply that I had portioned out specifically for pies last fall. Oops!
I originally found the recipe on Pinterest HERE. It is super easy to follow and there is no churning required!! Which means you don’t have to buy that expensive KitchenAid mixer attachment (that I had been looking at) or an ice cream maker. Bonus, making it homemade means no preservatives and YOU control all the ingredients!
Now, I will say that I still buy store-bought ice cream on occasion, but this is a really good and healthier alternative. Plus the kids love it! That’s a win-win my friends!
This time when I made it I changed up the recipe a bit by adding dark chocolate chunks. One word, YUM!
All you have to do is follow THIS RECIPE and when it tells you to fold in the cherries, just fold the dark chocolate chunks in with them. That’s it! I covered the pan with plastic wrap then foil and let it set overnight in the freezer.
Serve in a dish or in a waffle cone. Super delicious and perfect on those hot summer nights.
Tip: If you don’t like cherries substitute a fruit of your choice. This recipe is so versatile that your options are limitless. If you do alternate, I would recommend taste testing before freezing. If it’s not as sweet as you’d like, just add sugar one tbsp at a time tasting in between.
